  • 200g of mushrooms
  • salt, pepper and herbes de provence

  • Cut the chicken into pieces, taking out the bones, marinade it with salt, pepper, thyme, garlic, onion, parsley and oil and leave for a few hours. This is the longest part of the cooking process.
  •  Put the chicken pieces in a stockpot with the chopped bacon, onions, 3 garlic cloves and some chopped parsley.
  • Make a roux using 2 spoonfuls of flour, 2 spoonfuls of butter and one small glass of bouillon. Add 1 glass of Port wine, 200g of black pitted olives and the chopped mushrooms, and leave it to simmer for about 45 minutes. Remove from the heat and leave it to cool overnight.
  • Prepare the dough using the measures given. Cut a round crust and spoon the chicken onto the crust in small heaps. Cover with a second crust, seal the edges, then glaze with a beaten egg yolk.
  • Make 2 or 3 incisions in the dough and put it in the oven (180°C – 350°F) for about 40 minutes.
  • Remove from the oven when the crust is nicely golden.

We looked at group travel companies including those who specialize in "small" groups. None of them had the flavor we were looking for. In my search for somethin new I happened …

The organisation and friendliness of the places we stayed was outstanding. We travel a lot and this was a delightful experience that we can't wait to do again. I could not recommend more highly the professionalism in the booklets which are a long term reminder of a most memorable time. We travelled from NZ a long way for just two weeks but it was …

This was the best trip to France we have ever been on! It was the second trip that Emilie and Laura at France Just for You set up for us. The first was a trip around Provence, which we loved so much that we asked them to set up our second trip to the Loire Valley, Normandy, and Paris. Both trips were tailored to our interests - food, wine, art …

We are preparing to do our second trip with Emilie to the Loire Valley, October 2018. Our first trip was to the region of Provence which was perfectly guided and gave us a most memorable experience. I highly recommend Emilie’s ability to put together a fabulous and memorable France just for you holiday.

Lovely trip made easy by France just for you! We had a fabulous time in France on a two week driving trip. We provided a brief outline of some of the things we wanted to see and do and France Just for you created a daily itinerary, booked our Bed and Breakfasts and hotels, reserved our car and suggested things to see in each city we visited. It was …

Staying in B&B’s is a great way to see the country and meet the people who live there in their normal environment. And, “France Just for You” provides an excellent way to have this experience. Emilie’s knowledge and detailed planning made the trip exciting and enjoyable! We will definitely seek her out for our next trip to France.
