This is a different take on the classic gratin dauphinois, adding creamy brie cheese, crispy bacon and a little thyme.
Ingredients (8 side servings)
- 5 slices of bacon, cut into pieces
- 6 oz brie, thickly sliced
- 4 large potatoes, thinly sliced
- 1 onion, thinly sliced
- 2 garlic cloves, very thinly sliced
- 1 tablespoon thyme sprigs
- 1-1/4 cups thick cream
- 1/2 cup chicken stock
Instructions
- Preheat the oven to 400°F/180C. Cook the bacon in a large frying pan over medium heat for 5 mins or until crisp.
- Reserve 4 of the brie slices. Layer potato, onion, bacon, garlic, thyme and remaining brie slices in an ovenproof dish.
- Combine cream and stock, season. Pour over potato mixture. Bake for 1 hour or until golden brown and tender. Top with reserved brie. Bake for 10 mins or until melted and golden. Set aside for 5 mins to rest.
