“Biscuits roses de Reims” are a specialty of the Champagne area. They are light, crunchy finger-shaped cookies and are amongst the oldest cookies in France. The Maison Fossier has been making them since 1691.

You may dip them into a glass of Champagne to enjoy, but I like turning them into beautiful pink truffles. They make a perfect treat for a loved one, so keep this recipe in mind for Valentine's Day, a wedding anniversary, or an upcoming birthday!

Ingredients:

  • 1 cup crushed Pink Biscuits
  • ¼ cup sugar
  • ¼ cup + 3 tablespoons softened butter
  • 1 egg yolk
  • 1 teaspoon rum
  • Powdered sugar

Instructions:

  • Mix the butter and the crumbs, then add the egg yolk and rum, and finally the biscuit crumb. Mix well – the batter will be rather thick.
  • Place the batter in the refrigerator for 30 minutes.
  • Form the truffles in little balls, about the size of a walnut shell, and roll each one in the powdered sugar.

Enjoy with a glass of Champagne!

This was our second trip arranged by France Just for You. That says a lot. What says more is we would do another trip with them without any concern. They are pros from the time the trip is planned to the very last minute of the journey. Every detail is provided through the travel book, app and communication, if needed, during the trip. We would …

Emilie's services are amazing!! I contacted her after my one year anniversary trip planning fell through with another agency. She quickly picked up the reins from where they left off, listened to our budget requests and organized an absolutely fantastic trip for us! From Paris to Provence to the French Riviera, everywhere we stayed was wonderful …

The planning and coordination of our holiday was quite awesome and far exceeded all of our expectations and indeed our imagination. The 300 odd page personalised guide book with maps, times and distances, restaurants on route and at our destinations, recommended places to visit on route and the accomodation itself and hosts at each location were …

We looked at group travel companies including those who specialize in "small" groups. None of them had the flavor we were looking for. In my search for somethin new I happened …

Our first stay with Florence and Phil was especially memorable but really we cannot think of a highlight because it was all wonderful. We will certainly recommend your company to anyone we know travelling to …
