France Just For You Founder Emilie loves leeks and easy recipes so this is one of her favorites! This can be eaten for breakfast, lunch or dinner.
Ingredients
- 1 pie crust
- 1 tablespoon butter
- 2 large leeks
- 1 cup ricotta
- ½ cup double cream
- 2 eggs
- 2 tablespoons chopped tarragon
- Salt and Pepper
- Gruyere or swiss cheese
Instructions
- Heat oven to 375°F/190°C. Put the pastry in a quiche pan, prick the base with a fork and line with baking parchment and baking beans. Bake for 10 mins, then remove beans and parchment and return to the oven for 5 more minutes. Reduce oven to 340°F/170°C.
- Melt the butter in a large pan and gently cook the leeks for 10 minutes until softened. Beat together the ricotta, cream, eggs, tarragon, a little salt and plenty of black pepper. Stir in the leeks and all but a handful of the cheese.
- Pour the mixture into the tart and scatter the top with the remaining cheese. Bake for 25-30 minutes until golden and set. Leave to settle for 5 minutes, then carefully remove from the tin and allow to cool a little on a wire rack. Serve warm.
