The Loire Valley, where we are located, produces a huge variety of different goat cheese. This recipe is very easy to make, but so satisfying with the creamy goat cheese – you will not be able to stop with just one serving.

 

Ingredients for 4 servings :

  • 12 oz uncooked pasta
  • 3-4 oz soft goat cheese
  • ¾ cup cream
  • 2 oz grated Swiss cheese
  • Thyme, salt and pepper

Directions:

  1. Preheat the oven to 410°F/210°C. Cook the pasta according to the directions. When done, put them in an oven-safe dish.
  2. Melt the goat cheese and the cream together over low heat. Add the thyme, salt and pepper.
  3. Pour the cream mixture over the pasta. Cover with the grated Swiss cheese, and cook in the oven for 15 minutes.

 

This can be served with a side salad. Laura also sometimes adds frozen peas to the pasta when cooking to add a little color.
